Lightly fried, then baked, these are so yummy!I love eggplant w/a tomato sauce and cheese topping.

Ingredients For savory eggplant slices

  • 1 lg
    eggplant, cut into 1/2"-thick slices
  • 1/2 c
    all purpose flour
  • 1/2 tsp
    garlic powder
  • pinch
    salt and pepper
  • pinch
    italian seasoning
  • 2 lg
    eggs, beaten
  • 1 c
    italian-style bread crumbs
  • oil for frying
  • 1 jar
    tomato pasta sauce, like marinara
  • 1 c
    grated parmesan cheese
  • 8 oz
    shredded mozzarella cheese

How To Make savory eggplant slices

  • 1
    Heat oven to 350. Lightly spray a baking sheet w/ cooking spray. In shallow bowl, mix together flour, garlic powder, salt, pepper and italian seasoning.

    Place bread crumbs in another shallow bowl. Dip eggplant slices into flour, then into egg, then into bread crumbs. Heat some oil in lg skillet over med-high heat. Fry eggplant slices in batches till golden brown.

    Drain slices on paper towel. Place slices on baking sheet. Sprinkle w/ parmesan cheese. Spoon pasta sauce over slices. Sprinkle w/ mozzarella cheese. Bake 15 mins.
