This is a wonderful summer side dish with all the squash in either your garden or the local farmer's market.

Ingredients For sauteed summer squash

  • 2 Tbsp
    butter
  • 2 lg
    shallots, thinly sliced
  • 2 Tbsp
    chopped garlic
  • 1 tsp
    tarragon, dried
  • 1/2 lb
    yellow crookneck squash, trimmed, sliced into 1/3" rounds
  • 1/2 lb
    zucchini, trimmed, sliced into 1/3" rounds

How To Make sauteed summer squash

  • 1
    Melt butter in a large skillet over medium-high heat.

    Add shallots, garlic, and tarragon. Saute until onion is just tender, about 2 minutes.

    Add yellow squash and zucchini, and saute until crisp-tender, about 8 min. Season with salt and pepper.
