What a great way to jazz up roasted cauliflower! The combination of herbs and cheese plus utilizing bacon grease when baking makes this cauliflower very flavorful. Crumbled bacon and more cheese take this low carb side dish over the top. We bet everyone will eat their veggies when they try this recipe!

Ingredients For roasted bacon cheddar cauliflower

  • 6 slice
    bacon
  • 2 tsp
    dried thyme
  • 1/4 c
    shredded Parmesan cheese
  • 1 Tbsp
    garlic salt
  • black pepper
  • 1/4 c
    extra virgin olive oil
  • 2
    heads cauliflower
  • 1/2 tsp
    season salt
  • 1/2 - 1 c
    shredded cheddar cheese

How To Make roasted bacon cheddar cauliflower

  • Bacon frying in a skillet.

    Preheat the oven to 375 degrees F. Fry the bacon, reserving the grease.
  • Thyme, Parmesan cheese, garlic salt, pepper, oil, leftover bacon grease, and cauliflower in a bowl.

    In a medium bowl, combine the thyme, Parmesan cheese, garlic salt, pepper, oil, and leftover bacon grease. Add the raw cauliflower and mix well.
  • Cauliflower on a foil-lined baking sheet.

    Once coated, place the mixture on a foil-covered large rimmed baking sheet.
  • Cauliflower roasting in the oven.

    Sprinkle with the seasoned salt and bake 30 minutes or until lightly browned.
  • Bacon and shredded cheddar cheese in a bowl.

    Crumble the cooked bacon and add to a bowl. Mix in the cheddar cheese.
  • Melting the cheese over the cauliflower.

    Top the roasted cauliflower with the cheese mix and let stand 10 minutes before serving to allow the cheese to melt a bit. If the cheese is not melting properly, you can also place the dish back in the oven to help it.
