Ingredients For marsala carrot mash

  • 8 oz
    potatoes peeled cut thin
  • 1 lb
    carrots cut in slices
  • 1/4 c
    heavy cream
  • 2 Tbsp
    marsala wine or orange liquor
  • 1 Tbsp
    orange zest
  • 2 Tbsp
    softened butter
  • s&p to taste

How To Make marsala carrot mash

  • 1
    Add potatoes to saucepan, add water to cover, bring to boil and cook for 5min. Then add carrot slices. Continue cooking until both vegetables are completely tender (about 20-25min) Drain and return vegetables to the pan. Working over a low heat dry vegetables off for about 5min, mixing as needed. Transfer dried vegetables to a food processor and add butter, cream, s&p, marsala wine & orange zest. Adjust flavor with seasonings to Your taste. This can be added to a piping bag to decorate plate.
