Saw this on TV, it sounded so good for a quick summer veggie salad. Tried it and loved it!

Ingredients For marinated vegetable salad

  • 1 c
    sugar
  • 1 c
    red wine vinegar
  • 1/2 c
    olive oil
  • 16oz bag
    frozen green beans, thawed
  • 16oz bag
    frozen peas, thawed
  • 2
    sweet onions, sliced thin
  • 1
    red pepper, sliced
  • pinch
    salt
  • 2oz jar
    red pimento (optional)

How To Make marinated vegetable salad

  • 1
    Cook together the sugar and red wine until sugar is dissolved. Cool.

    add olive oil and mix well.

    Mix vegetables in a large bowl, pour cooled marinade over the vegetables. Cover and refrigerate for 24 hours.
