4beets, trimmed

1 Tbspolive oil

3 clovegarlic, minced

1onion, finely chopped

1tomato, chopped

2 Tbspchopped fresh cilantro

1/4 tspground cumin

1/4 tspcurry powder

1 Tbspvinegar or lemon juice

3 Tbspolive oil

1 pinchsugar

1 pinchsalt, or to taste

1 pinchcayenne pepper, or to taste
How To Make grilled beets with moroccan dressing

1Prepare a charcoal fire or light a gas grill.

2Brush the beets with olive oil and place over medium-low coals. Cook slowly until they can be easily pierced with a fork, an hour to an hour and a half.

3Remove from heat, peel, then cut into thick slices.

4Meanwhile, combine the garlic, onion, tomato, cilantro, cumin, curry powder, vinegar (or lemon), and olive oil. Toss with the beets. Taste for seasoning.

5Serve warm or room temperature.

6NOTE: Canned beets can be substituted. If unsliced, they can be place a few minutes on the grill to pick up some smoky flavor.
