Ingredients For garden delight baked zucchini

  • 2 tsp
    olive oil
  • 2 lb
    zucchini, cut into half-moon slices
  • 1/4 c
    onion, chopped
  • 3
    plum tomatoes, cut into chunks
  • 2 Tbsp
    grated parmesan cheese
  • 1/2 c
    reduced-fat, shredded italian-style cheese
  • 1 tsp
    garlic powder
  • 1-1/2 tsp
    italian seasonings
  • 2 Tbsp
    italian-style bread crumbs

How To Make garden delight baked zucchini

  • 1
    Heat oven to 375. Spray a 2-quart baking dish w/ cooking spray. Heat oil in skillet over med-high heat. Saute zucchini and onion, 5 mins.

    Stir in tomatoes, parmesan cheese italian cheese, garlic powder and italian seasonings. Cook, stirring for 3 mins.

    Spoon mix into baking dish. Sprinkle w/ bread crumbs. Bake 30 mins, or until golden and cooked through.
