This is one of my personal favorites. My friend Sheila gave me this recipe one Christmas that is one of her family favorites and now mine too! This makes great finger food, appetizer, or snack. My son, who does not like asparagus, could not get enough of them! These are addictive. It makes a great alternative to such a usually misunderstood vegetable. Make sure to choose asparagus that has a thinner stalk. Thick stalks tend to be fibrous.

In minutes, you can have these fried asparagus spears for an appetizer or a snack. Fresh asparagus is double coated in a cheesy Italian bread crumb mixture and fried. They become crunchy with a little spicy kick. Our coating didn't stick as well as Linda's so they are not as pretty, but they were so good and disappeared fast.

Ingredients For fried asparagus

  • 1 lb
    fresh asparagus
  • 1 - 2 c
    Italian bread crumbs
  • 1+ c
    finely grated fresh Romano cheese
  • 1 - 2 tsp
    freshly ground black pepper
  • 1 tsp
    garlic powder
  • 1 tsp
    onion powder
  • 1 tsp
    finely ground Kosher or sea salt
  • 4 lg
    eggs
  • 2 Tbsp
    cream or half and half
  • olive oil for frying

  • In a shallow dish, combine Italian bread crumbs, Romano cheese, and all the seasonings.
