These are always a great hit at parties and a wonderful way to get people who don't normally love spinach to eat it. A walk around party hors d'oeuvre that can be made ahead of time to leave the hostess with more time the day of the party. They got their name because Popeye always eats his spinach out of a can - YUCK - and these are so delicious that he can eat his heart out longing for these instead!!

2 boxspinach, 10 oz each, moisture squeezed out completely

4 lgeggs, beaten

1 lgonion, minced

2 cPepperidge Farm herb seasoned stuffing mix (be sure the bread is crumbled, not the large cubes)

1/2 cParmesan cheese

3/4 cbutter, melted
-
1/2 tspsalt
-
1/2 tspblack pepper
-
1/2 tspgarlic poweder
How To Make eat your heart out popeye spinach balls

1Mix all ingredients together.

2Form into small balls. Place on a spray-lined baking dish. Cover with plastic wrap. Chill in refrigerator for at least 1 hour

3Bake at 350 degrees for 20-30 minutes. Can be served hot or warm.
