easy mushroom quiche

I absolutely love this quiche w/ sauteed shallots and mushrooms! Makes a great lunch served w/ salad.

Ingredients For easy mushroom quiche

  • 1
    unbaked pie crust
  • 1 Tbsp
    canola oil
  • 1 Tbsp
    butter
  • 1/3 c
    chopped shallots
  • 8 oz
    favorite mushrooms, quartered. i used button mushrooms
  • 1/2 tsp
    salt, divided
  • 1 Tbsp
    minced garlic
  • 1 c
    chopped parsley
  • 3
    eggs
  • 3/4 c
    light cream
  • 1/4 tsp
    pepper
  • 1 c
    reduced-fat shredded swiss cheese, i used alpine lace cheese

How To Make easy mushroom quiche

    Heat oven to 425. Line a 9" pie pan w/ crust. Place pie pan on a baking sheet, prick the crust w/ a fork. Bake 20 mins, let cool.

    Reduce heat to 375. Heat oil and butter in lg skillet, over medium heat. Add shallots, cook 1 mins. Add mushrooms, cook 2 mins. Stir in parsley. Cook 2 mins more. Stir in garlic and 1/4 tsp salt. Cook 2 mins, turn off heat.

    In lg bowl, whisk together eggs, light cream remaining salt and pepper. Sprinkle mushroom mix over bottom of crust. Pour egg mix over mushrooms. Sprinkle w/ cheese. Bake 25-30 mins, or until a knife inserted in center comes out clean.
