Ingredients For easy mushroom curry

1/2 lgred onion, finely chopped

butter or extra virgin olive oil for sauteing

3 clovegarlic, finely chopped

1 tspcumin, ground
-
1 tspcoriander, ground
-
1 tspchili powder
-
1/2 tspturmeric, ground
-
12 ozwhite or baby bella mushrooms, sliced
-
1/2 tspsalt
-
1 mdtomato, diced
-
1/2 mdgreen bell pepper, diced
-
3 Tbspfresh cilantro, chopped
How To Make easy mushroom curry

1Saute onion in butter or olive oil until soft, about 3-4 minutes.

2Add garlic and saute another minute.

3Add cumin, coriander, chili powder, turmeric and saute an additional minute.

4Add mushrooms and saute until they have released their moisture.

5Add tomatoes, green pepper, and salt. Saute until peppers just begin to soften.

6Add fresh cilantro and remove from heat. May be served over basmati rice, cous cous, sliced hard cooked eggs, poached eggs and toast, rice vermicelli, etc.
