I changed the typical Cowboy Caviar to make it a quick and easy appetizer. Chop everything the same size. This is great with Tostito's Scoops.

If you find yourself always gravitating towards cowboy caviar at a party, try Rosina's version. Everyone puts their own spin on it and she uses corn, tomatoes, black beans, onions, and green pepper. They all pair well with the tangy vinegar sauce. We decided to add a few dashes of hot sauce and it brought this dip to another level. Chill or enjoy right away. Make sure to have plenty of tortilla chips handy when serving.

Ingredients For easy cowboy caviar

1 cansweet corn, drained (15.25 oz)

1 candiced tomatoes, flavored is ok, don't drain (14.5 oz)

1 canblack beans, rinsed (15 oz)

1/2 mdred onion
-
1green pepper
-
1/4 cred wine vinegar
-
1/4 colive oil
-
freshly ground sea salt & pepper, to taste

1 bagTostitos Scoops or other corn chips if using as an appetizer or snack

If using hot sauce, add it to suit your taste. We used a few dashes.

1I usually make this in the same bowl I use to serve it. Open a can of tomatoes. Add to the bottom of a mixing bowl. Open and drain the can of corn; add to bowl. Open, drain, and thoroughly rinse the can of black beans. Add to bowl.

2Chop green pepper into pieces (the same size as corn and beans). Add to bowl. Chop red onion into pieces (the same size as corn and beans). Add to bowl.

3Add red wine vinegar, olive oil, salt, and pepper, to taste. Mix.

4For variety, add hot sauce.
