Ingredients For crumb-coated parsnip patties

  • 8-10
    parsnips, peeled and cubed
  • 1/2 tsp
    salt
  • boiling water
  • 1/2 tsp
    onion salt
  • 1/8 tsp
    pepper
  • 1/2 tsp
    salt
  • 1
    egg, beaten
  • 1/3 c
    fine bread crumbs
  • 2 Tbsp
    butter
  • 1/4 c
    bread crumbs

How To Make crumb-coated parsnip patties

  • 1
    Peel and cube parsnips and cook in boiling salted water until tender. Drain and mash. Beat in seasonings and egg. Add bread crumbs. Chill well. Make into 6 patties. Cover with additional bread crumbs and fry in melted butter until golden brown on both sides. Makes 6 servings.
