creamed spinach
I'm not a huge fan of spinach, but creamed spinach I love! The creamy goodness is hard not to love. So I decided to make a go at it and I think it came out great! I think this gives better flavor then other recipes that just use heavy cream. 2 of us ate it so I say it serves 2, but honestly l could have eaten the whole thing myself! I hope you enjoy :)

Ingredients For creamed spinach

1 canspinach (or about 15oz frozen, thawed)

4 ozcream cheese (reg, low-fat, or fat-free can be used)

1/4 cmilk

1 Tbspchopped garlic

1 Tbsponion powder

1 tspbutter
-
1/2-1 cshredded cheese (your favorite flavor, i used cheddar/mozzarella blend but i think a sharper flavor would be great too)
How To Make creamed spinach

1Drain spinach, removing as much liquid as possible. I put it in a sifter and used a fork to push the spinach against the sides.

2Add all ingredients except shredded cheese to a medium sauce pan. Cook over medium heat, stirring regularly, until cream cheese melts fully and becomes smooth.

3Add shredded cheese and mix until completely melted. Serve hot. Enjoy!
