This is a Southern way to fix carrots. Like so many recipes, each family has their own version. This is the one that I have had over the years.

Ingredients For copper pennies

  • 2 lb
    sliced cooked carrots
  • 1 c
    sugar
  • 1/2 c
    vegatable oil
  • 3/4 c
    tarragon vinegar
  • 1 md
    onion, sliced thin
  • 1 sm
    green pepper, sliced
  • 1 can
    tomato soup
  • 1 tsp
    worcestershire sauce
  • 1 tsp
    mustard
  • salt and pepper

How To Make copper pennies

    Mix and let stand in refrigerator overnight. Keeps almost indefinitely in tightly covered bowl.
