Ingredients For collard greens goulash

    collard greens, defrosted
  • 1/2 lb
    cooking ham or smoked turkey ham
  • 1/2 sm
    onion, diced
  • 3
    garlic cloves, diced
  • 1
    tomato chopped
  • 1 Tbsp
    olive oil
  • salt/pepper to taste
  • 1 can
    tomato sauce
  • splash of white wine
  • 1 sm
    potato , diced small

    In a large skillet, on medium sauté in olive oil the ham, onions, garlic, and tomato about 5-7 mins.

    add in the collard greens, tomato sauce, potatoes, salt pepper and wine...cover and simmer on low another 15 mins or until potatoes are tender but not mushy...
