Had some delicious sweet corn, so this is what I threw together...I used what I had on hand...it turned out delicious...I love the taste of the charred corn in this salad...you could use frozen corn that's been thawed and drained. Enjoy! My photos

How To Make cassies grilled sweet corn salad
-
1Preheat your grill. Husk corn and I pour a little olive oil in my hand and rub each cob until lightly coated...salt and place on grill. I grill just until some char marks and most of the starchiness is gone...about 5 - 6 minutes, turning frequently. Let cool, then I use my mandolin to remove from cob...can use a sharp knife.
-
2Place pepper, onion, tomatoes in a bowl, then add the cooled corn.
-
3In a small dish, mix the vinegar, salt, pepper, oil and basil. Pour over corn mixture and toss well to coat. Taste to see if needs more seasonings. Chill for a few hours, then before serving - toss in some bacon and feta cheese if desired. Enjoy!
