Ingredients For carrot souffle

  • 1 lb
    carrots, coarsely chopped
  • 1/2 c
    butter
  • 1 tsp
    pure vanilla extract
  • 3 lg
    eggs
  • 3 Tbsp
    all purpose flour
  • 1 tsp
    baking powder
  • 3/4 tsp
    salt
  • 3/4 c
    white sugar

How To Make carrot souffle

  • 1
    Cook carrots until tender in boiling salted water. Drain and mash.
  • 2
    Stir in butter, vanilla and eggs. Mix well.
  • 3
    Sift together flour, baking powder, salt and sugar. Stir well into carrot mixture and blend until smooth.
  • 4
    Pour into buttered casserole dish. Bake 45 minutes at 350 degrees.
