Ingredients For cajun eggplant dressing

2 smeggplants

2 mdonions, chopped

1 stickbutter, melted

4egg yolks, slightly beaten
-
1/2 cparmesan cheese, grated

1 tspsalt

8 citalian bread crumbs

1/2 cmilk
-
1/2 tspcayenne pepper
-
1/2 tspbaking powder
-
1 lbcheddar cheese, grated

1 tsptony chachere's seasoning mix
How To Make cajun eggplant dressing

1Dice eggplants into 1-12 cubes. Cook eggplant and chopped onion in boiling water to cover for 20 minutes or until tender. Drain and mix with ingredients except cheese and cajun seasonint.

2Place mixture into greased casserole and add grated cheddar cheese and creole seasoning on top.

3Bake at 350 degrees for 30 minutes or until cheese is melted and casserole is bubbly.
