Ingredients For broccoli cornmeal cakes

  • 1 c
    all purpose flour
  • 1 c
    yellow cornmeal
  • 1/2 tsp
    kosher salt
  • 1 Tbsp
    baking powder
  • 1 1/2 c
    milk
  • 2
    eggs, lightly beaten
  • 3 Tbsp
    vegetable oil
  • 2 c
    chopped cooked broccoli
  • goat cheese and bacon for garnish, if desired

How To Make broccoli cornmeal cakes

    In a medium bowl whisk together flour, cornmeal, salt and baking powder.

    Whisk in the milk, eggs, and vegetable oil until smooth. Stir the chopped broccoli into batter.

    Pour 1/2 cup batter into a hot, lightly greased skillet. Cook over medium heat 1 to 2 minutes each side. Repeat three times until all the batter is used. Top with goat cheese (or any other kind you prefer) and crumbled bacon.
