bell pepper and bean salad
This is a super easy, healthy, and colorful side dish. Sometimes I use Red Kidney beans instead of the black beans. Both are good! You can use all the colors of the bell peppers or just a few.

Ingredients For bell pepper and bean salad

2 (15 ounce) cans black beans, drained and rinsed

1 (16 ounce) can cannellini beans, drained and rinsed

1 green bell pepper, chopped

1 orange bell pepper, chopped

1 yellow bell pepper, chopped

1 red bell pepper, chopped

1 cup red onion, chopped

1 -2 garlic clove, minced

1/2 cup fresh parsley, chopped

1 large lemon, juiced

1Add all the prepared ingredients in a bowl.
