Ingredients For barley-pine nut casserole

1 cuncooked pearl barley

1 1/2 cv-8 vegetable juice

1/2 tspsalt

1/4 tsppepper

2 mdstalks celery, sliced

1 mdbell pepper, chopped

1 mdonion, chopped
-
1 can(14-1/2 oz.) ready-to-serve vegetable broth (or chicken broth)

4 mdgreen onions, sliced

1/3 cpine nuts, toasted
How To Make barley-pine nut casserole

1Mix all ingredients except green onions and nuts in a 4- to 6-qt. slow cooker.

2Cover and cook on LOW setting for 6-8 hours or until barley is tender. Stir in green onions and nuts.

3To toast pine nuts: Put the nuts in a dry skillet and cook over medium-low heat, stirring frequently, until golden in spots, about 3 minutes
