A simple, yet yummy chicken dish I've been making for years. I usually serve this w/ rice pilaf.

Ingredients For bacon-wrapped chicken, stuffed w/ spinach

  • 1/2 c
    mayonnaise
  • 1
    10 oz pkg frozen chopped spinach, thawed,squeezed dry
  • 1/2 c
    crumbled feta cheese
  • 2 tsp
    minced garlic
  • 4
    boneless, skinless chicken breasts
  • 4 slice
    bacon

How To Make bacon-wrapped chicken, stuffed w/ spinach

    Heat oven to 375. In medium bowl, mix together mayonnaise, spinach, feta and garlic.

    Slice each chicken breast in thickest part w/out going all the way through. Spoon spinach mix into chicken pockets.

    Wrap each chicken breast w/ a slice of bacon. Secure w/ a toothpick. Place chicken in a shallow pan. Cover w/ foil. Bake about 1 hr, or until juices run clear.
