I love these beets infused w/ apple juice! Perfect for a ham dinner. Goes well w/ turkey also.

Ingredients For apple-poached beets

  • 3/4 c
    apple juice
  • 1/2 c
    water
  • 1 Tbsp
    light brown sugar
  • 2-1/2 lb
    beets, peeled, cut into bite-size pieces
  • salt & pepper to taste
  • honey for drizzling
  • 1 Tbsp
    snipped parsley

How To Make apple-poached beets

    In lg saucepan, combine 1/2 cup apple juice, water and brown sugar. Bring to a boil, stirring to dissolve sugar.

    Add beets. Return to a boil.Reduce heat. Cover and simmer until beets are tender, about 45 mins. Splash w/ remaining juice. Drizzle w/ honey. Sprinkle w/ parsley.
