Everybody loves this at the holidays. It's a rich dish full of flavor. I make it about twice a year at Thanksgiving and Christmas.

Ingredients For shoe peg corn casserole

  • 1/2 c
    chopped onion
  • 1/2 c
    chopped celery
  • 1/4 c
    green bell pepper
  • 1/2 c
    sharp cheddar cheese grated
  • 1-2 can
    shoe peg corn
  • 1 can
    cream of celery soup
  • 1/2 pt
    sour cream
  • 1 stick
    butter, melted
  • 1
    sleeve of ritz crackers
  • SALT & PEPPER TO TASTE

How To Make shoe peg corn casserole

  • 1
    Mix together the first 8 ingredients. Plus add the salt & pepper.

    Place mixture in a 9/13 greased casserole dish. I usually spray mine with cooking spray, typically Pam.
  • 3
    Melt butter and mix with Ritz crackers and spread that on top of the casserole.
  • 4
    Bake at 350 degrees for 45 minutes .
