Ingredients For passover broccoli souffle

  • 6
    eggs, separated at room temperature
  • 2 pkg
    (10 ounces) frozen chopped broccoli or frozen chopped spinach
  • 1
    onion
  • 1
    zucchini, coarsely grated
  • 4 Tbsp
    matzo meal
  • 2 Tbsp
    vegetable soup mix
  • 1/2 c
    mayonnaise
  • salt and pepper to taste

How To Make passover broccoli souffle

  • 1
    Cook broccoli and drain.
  • 2
    Put in blender with egg yolks, onion, 2 tbsp. vegetable soup mix and mayonnaise. Add grated zucchini and matzo meal. Beat egg whites separately. Fold into vegetable mixture.

    Grease a 9 X 13 inch pan. Bake at 350 degrees till browned for 1 hour.
