low carb spinach artichoke casserole
My kids absolutely devoured the second half of this dish and claimed they liked it better than the original. I guess we're all going to be low carb for the next holiday, at least on this dish. I'll post the original Spinach Artichoke casserole too.

Ingredients For low carb spinach artichoke casserole

8 ozspinach, frozen chopped

2 Tbspbutter, softened

2 ozcream cheese, room temperature

1/4 cparmesan cheese

1/4 cpork rinds, crushed

1 Tbsptamari sauce

1 Tbspitalian seasoning

1/2 canartichoke hearts, quarters
How To Make low carb spinach artichoke casserole

1Defrost spinach 2 minutes in the microwave stirring after one minute. Drain and squeeze moisture from spinach.

2Add softened butter, cheese, seasonings and Tamari sauce. Add artichoke hearts and mix well. Mix Parmesan and pork rinds. Add 1/4 cup of cheese mixture, saving the rest for topping. Microwave 30 seconds.

3Cream together until well blended. Top with remaining Parmesan mix. Microwave for 1 minute covered. Let stand 1 minute. Alternately bake at 350˚ for 20 minutes.
