This is a classic Southern dish. I've been making it for years, and it's a family favorite. Try using Colby Jack instead of Cheddar or adding green chiles for a change.

Ingredients For jiffy cornbread pudding

  • 2 box
    jiffy cornbread mix
  • 2
    eggs
  • 2/3 c
    milk
  • 1 c
    sharp cheddar cheese, shredded
  • 1 can
    creamed corn, 14 oz
  • 1/2 tsp
    smoked paprika (substitute regular paprika if necessary)

How To Make jiffy cornbread pudding

    Preheat oven to 400. Spray an 8x8 baking dish with cooking spray.

    Combine all ingredients in a large mixing bowl until well blended and pour into baking dish.

    Bake 40 minutes until nicely browned. Let rest for five minutes before serving. Serve with a spoon.
