This recipe is one I got from my Aunt Becki. She makes this one for Christmas Dinner. I like it best with Easter Dinner to accompany ham!

Ingredients For baked potato casserole

  • 8
    potatoes, boiled and peeled
  • 1 pt
    sour cream
  • 2 tsp
    salt
  • 1 bunch
    green onions, chopped
  • 1 3/4 c
    grated cheddar cheese
  • 1/4 tsp
    pepper

How To Make baked potato casserole

    Skin boiled potatoes and chill.
  • 2
    Grate potatoes into large bowl. Add 1 cup cheddar, sour cream, salt and pepper. Stir to combine and put in casserole dish. Top with remaining cheddar and onion.

    Bake covered at 350 degrees for 40 minutes.
