One of my favorite rices. I made a spiced shrimp, that I ladled over top. So, so good! This rice could be served as a side with any meat. Yum!

1 cbasmati rice

handfulmixed vegetables, frozen

2 cchicken broth

1/2 - 1 tspchicken buillon

1 Tbspdried, minced onion

1/2 tspsalt

1 Tbspbutter

couple pinchsaffron - crumbled

1Rinse the Basmati rice and drain. In a medium saucepan, add all ingredients and stir. Bring to a boil then turn heat to simmer. Place a lid over pan and simmer for 15 minutes. If liquid is not absorbed, simmer a bit longer.

2Fluff with fork and serve immediately. Delicious!
