red beans and rice
Love this recipe. You can use either red kidney beans or pigeon peas. Parboil rice makes it easier to cook.

Ingredients For red beans and rice

3 c3 cups of rice(i like parboil)

1 can1 can either kidney beans or pigeon peas

5 clove5 cloves of garlic (finely chopped)

11 uncut scotch bonnet pepper
-
3 sprig3 scallions(cut off ends near root)

1 can1 can of coconut milk
-
1 1/2 tspsalt
-
1 tspblack pepper
-
2 sprigfresh thyme
How To Make red beans and rice

1Add beans or peas to the pot along with garlic

2Add your coconut milk, rice, salt, black pepper and thyme to the mix

3Crush the scallion (do not chop) and add this and the uncut scotch bonnet pepper,the pepper remains uncut so as to not make the rice spicy, just give it a subtle peppery flavor.

4Rice and Peas should be ready after about 40 minutes (exact cooking time will depend on the brand of rice used).
