This delicious rice is my cousin Nilsa's recipe.

Ingredients For mexican rice

2 cminute rice
-
1 mdtomato, chopped

1/2 smonion, chopped

1 (4.5 oz. canchopped green chilies

1 clovegarlic, minced

1/2 tspcumin
-
1/8 tspsalt (or to taste)

2 cwater
How To Make mexican rice

1Heat 1 Tbsp. oil in skillet. Add onion, garlic and chilies.

2Saute onion, garlic and chilies 5 minutes.

3Add tomato and saute 3 more minutes. Set aside.

4Brown the uncooked rice in 1 Tbsp. oil.

5Add water, onion mixture and seasonings.

6Bring to a boil. Cover and simmer until rice is done, about 5 minutes.

7Stir to mix.
