2 canchicken broth

2 ( 10oz) canrotel tomatoes

1 (15oz) cancorn, optional

1 tspcumin

salt, to taste

1 cshredded jack cheese, optional
How To Make mexican rice

1Saute onion in butter. Add rice and simmer until rice browns. Add rest of ingredients. Cover and simmer until liquid is absorbed into the rice.

2Top with Shredded Jack cheese if using.
