Ingredients For fresh tomato infused rice

1/4 colive oil

2 Tbspbutter

1 lgonion chopped

4 clovegarlic minced

3 lgtomatoes peeled, seeded and chopped

4 cchicken stock
-
1 Tbspchicken bouillon

2 clong grain rice

chopped cilantro for garnish
How To Make fresh tomato infused rice

1Heat oil and butter in large pan over medium heat. Add the onion and cook until soft. Add garlic and cook another minute. Add the tomatoes. Cover and simmer over low heat for 15 minutes.

2Puree tomato mixture with a immersion blender or remove and puree with a food processor. Add the stock and bouillon. Bring to a boil. Stir in rice and simmer covered for about 20 minutes.

3Garnish with cilantro.
