forbidden rice with a twist

Needed to try something different so as I was wandering aimlessly through the grocery store I found this black rice and said what the heck, let's see what I can come up with. The squeeze of fresh lemon on top just makes this pop. The photo actually shows a complete meal. I will post the shrimp recipe also.

Ingredients For forbidden rice with a twist

  • 1 c
    forbidden black rice
  • 1 1/2 c
    vegetable broth
  • 1/2 c
    sake
  • 20
    saffron strands
  • 1
    onions, vidalia, diced
  • 1/2 lb
    baby bella mushrooms sliced
  • 3 clove
    garlic minced
  • 2 Tbsp
    butter unsalted
  • 2 Tbsp
    olive oil
  • salt and pepper
  • 1
    lemon

How To Make forbidden rice with a twist

    Sauté onion, garlic, and baby portobello mushrooms in butter and olive oil until soft
  • 2
    Add rice and sauté 5 minutes to coat rice
  • 3
    Add stock,salt, pepper, saffron and sake simmer until liquid is absorbed. About 40 minutes
  • 4
    Squeeze fresh lemon on servings
