The origination of this recipe is unknown. What I do know is that my family has been tweaking this for years. This is the version my family uses and it's wonderful. Easy to make, one pan dish that's a highlight of any meal. Enjoy!

Ingredients For easy old fashion spanish rice-connie's

1/2 cgreen pepper, seeded and chopped

1/4 conion, chopped

1 clovegarlic, minced

1/2 tspdried basil, crushed

1/2 tspdried rosemary, crushed

2 Tbspbacon grease (olive oil or cooking oil could also be used instead)

2 cchicken sock or broth
-
1 cregular white rice
-
1 ctomato, peeled and chopped
-
1 tspsalt
-
1/8 tspblack pepper
-
fresh parley for garnish
-
sour cream for topping (if desired, we don't use it very much)

1In a large skillet with a lid,, cook green pepper, onion, garlic, basil, and rosemary in bacon grease or substitute until veggies are tender.

2Stir in chicken stock.

3Add rice, tomato, salt, and pepper to pan.

4Cook, covered, over low heat until rice is done (about 20 minutes).

5Fluff rice mixture and garnish with parsley. Top with a dab of sour cream if desired.
