I was trying to find a way to make rice a little less boring, and also sneak in some veggies for the kids.... a few hits and misses, and this yummy side dish was born. Everyone loves it, and it's so easy to make (and ready in just minutes!).

Ingredients For easy mushroom "risotto"

1 cancream of mushroom soup

1 canwater
-
1/2 cmushrooms, fresh or canned

1/2 cfrozen green peas

1 1/2 cinstant rice
How To Make easy mushroom "risotto"

1Saute mushrooms in a scant amount of oil (or use non-stick spray). Set aside.

2Whisk soup and water together until well blended. Bring to a low boil (too high and it will burn).

3Add mushrooms, frozen peas, and rice. Mix well.

4Cover and reduce heat to VERY low for 10 minutes. Fluff with fork and serve.
