This is something that I first tasted at TGIFriday's. I fell in love with it and then they stop selling. So I can to recreate it. It's a great side this for grilled chicken or fish.

Ingredients For coconut confetti rice

  • 1 c
    jasmine rice
  • 1/2 c
    coconut milk, unsweetened
  • 1/2 c
    water
  • 1 tsp
    vanilla extract
  • 1/2 c
    mango, diced
  • 1/2 c
    sweet onion or shallots, carmelized
  • 1/4 c
    green onion, tops only
  • 1/4 c
    sweet red pepper, chopped
  • **NOTE** FOR A LITTLE EXTRA FLAVOR SPRINKLE WITH A LITTLE BIT OF CINNAMON & NUTMEG.

How To Make coconut confetti rice

  • 1
    Combine water, milk, and vanilla in a saucepan and add rice.

    Bring to a boil, then cover and simmer until rice has absorbed liquid, about 15-20 minutes. This may depend on the brand of rice you buy, so double check the directions.

    Stir in coconut, mango, Vidalia onion, green onion, and red pepper.
