Wow, these Texas potatoes are creamy and full of flavor. We love how the fresh onions blend with the creamy soup and sour cream to create a yummy sauce. On top is a buttery cracker mixture that gets crunchy and golden brown. These are good enough to serve for a holiday or special occasion, but easy enough to make any time you feel like a potato side dish.

Ingredients For texas potatoes

  • 1/2 c
    chopped onion
  • 2 can
    cream of chicken soup (10.5 oz each)
  • 1 pkg
    sour cream (8 oz)
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 pkg
    diced hash brown potatoes, frozen (2 lbs)
  • 1/2 c
    melted butter, divided
  • 1 - 2
    sleeves of Ritz crackers

Every oven is different. At 45 minutes ours weren't bubbly. We cooked them for another 10 minutes and it was perfect.
  • Onion, cream soup, sour cream, salt, pepper, and melted butter in a bowl.

    Preheat oven to 350 degrees. Mix the first five ingredients and 1/4 cup of the melted butter in a mixing bowl.
  • Stirring in potatoes.

    Add hash browns and mix well.
  • Coated potatoes in a casserole dish.

    Pour into a greased 9 x 13 pan.
  • Mixing crushed crackers and melted butter.

    Crumble Ritz crackers and mix with remaining melted butter.
  • Crackers sprinkled over the potatoes.

    Sprinkle on top of the potato mixture.
  • Baking the Texas potatoes.

    Bake for 45 minutes.
