Ingredients For tender n tasty potatoes

  • 8 oz
    package bacon, cooked crisp - drained and crumbled
  • 1 lg
    sweet onion, sliced
  • 2 clove
    garlic, chopped
  • 5 md
    russet potatoes - skin on and diced to about 1 1/2 inch pieces
  • 1 1/2 c
    frozen spinach, thawed not necessary
  • 1 - 14.5 oz
    can chicken broth
  • salt
    & pepper to taste

How To Make tender n tasty potatoes

    In a large skillet; cook bacon until crisp; remove to paper towel to drain. In same skillet, in bacon grease - saute onions until translucent and starting to brown. Add garlic when onions are almost done. Cook another minute or two, making sure garlic doesn't burn.

    Add potatoes, spinach, salt and pepper and broth. Bring to a boil, then lower heat to simmer. Cover and continue cooking until potatoes are tender. About 25 minutes.

    When potatoes are fork tender; sprinkle with the crumbled bacon and serve.
