Breakfast doesn't have to be bland or boring. To make use of leftovers and add a surprisingly sweet & savory flavor to breakfast try these baked fries.

Ingredients For sweet & savory cottage fries

  • 1 sm
    yam
  • 1 md
    potato
  • 1 sm
    red onion
  • 2 clove
    garlic
  • dashes
    chili powder, paprika, ground ginger, salt & pepper
  • 1/4 c
    olive oil, extra virgin

How To Make sweet & savory cottage fries

  • 1
    preheat oven 450 degrees F.
  • 2
    scrub potatoes then place on paper towel for drying
  • 3
    pour 1/4 c. extra virgin Olive oil in bowl
  • 4
    cut potatoes into quarters then slice from ea. quarter the desired size slices
  • 5
    dip ea. one into oil then place on baking pan
  • 6
    sprinkle liberally with spices & garlic
  • 7
    slice red onion thin and sprinkle on top of potatoes
  • 8
    Bake in hot oven (not broiler) Bake for 45 min. turning mid-way the crisping process Remove from pan and serve hot
