Ingredients For sweet potato croquettes

  • 3 cups sweet potatoes, cooked and mashed.
  • 1/4 cup butter, softened
  • 1 teaspoon salt
  • 2 tablespoons brown sugar
  • 1/2 cup crushed pineapple, drained
  • 1 egg, slightly beaten
  • 1 cup dry bread crumbs
  • oil for deep frying

How To Make sweet potato croquettes

  • 1
    Mix sweet potatoes, butter, brown sugar, salt, and drained crushed pineapple. Shape into balls 1-1/2 inches in diameter

    Dip each ball in beaten egg and roll in bread crumbs.

    Deep fry in oil 375 - 385 degrees until brown
