2 tablespoons brown sugar

1/2 cup crushed pineapple, drained

1 egg, slightly beaten

1 cup dry bread crumbs

oil for deep frying
How To Make sweet potato croquettes

1Mix sweet potatoes, butter, brown sugar, salt, and drained crushed pineapple. Shape into balls 1-1/2 inches in diameter

2Dip each ball in beaten egg and roll in bread crumbs.

3Deep fry in oil 375 - 385 degrees until brown
