This is a healthier option to having burgers albeit the Gorgonzola cheese! But you gotta have some bad to make it good is what I say!Hope you enjoy these as much as we do!

Ingredients For stuffed chicken burgers

  • 1 lb
    ground chicken breast meat
  • 1 bunch
    broccoli rabe or rapini
  • 1 pkg
    mushrooms, fresh
  • 1 pkg
    gorgonzola cheese crumbled

How To Make stuffed chicken burgers

    I used a burger stuffer to make these delicious burgers and also used ground chicken breast as the meat. The stuffing is sauteed mushrooms,Gorgonzola cheese and broccoli rabe that has been blanched and chopped.

    To form the burgers,divide the meat into four quarter pound portions.Then saute the sliced mushrooms in two tablespoons of butter,season with salt and pepper.Next blanch the broccoli rabe in a pot of salted boiling water,drain and cool slightly.

    Chop about 1/4 of the broccoli rabe for the stuffing,reserve the rest as a side dish.Spray the burger stuffer with some cooking spray(the burgers won't stick that way.)Then I wrap a plate with plastic wrap so the burgers as easy to handle and won't stick to the plate,refrigerating them for an hour before cooking helps also or pop them in the freezer for ten or fifteen minutes.Spoon two tablespoons of mushrooms followed by two tablespoons of chopped broccoli rabe and one of Gorgonzola cheese. Top with another 1/4 pound of meat and press the edges down along the burger using the back of the spoon with a bit of water on it so it won't stick to the meat. This makes the top patty adhere to the bottom patty,sealing the stuffing in center!

    You are now ready to cook the burgers. I like to use a grill pan to make mine,I drizzle a little olive oil into the pre-heated pan,then cook each burger 3-4 minutes per side. I top each burger with additional cheese and mushrooms and serve with crispy baked sweet potato fries! I hope you enjoy these as much as we do! :)
