smoked salmon potato salad

I made this at the beginning of lent. The smokey Salmon added to the potato salad gives it a great smokey taste (almost like bacon) It was a big hit in my Family. The next day this made a great lunch.

Ingredients For smoked salmon potato salad

  • 3 lb
    waxy potatoes i used 1/2 red 1/2 yukon
  • 1/2 c
    mayonnaise
  • 1/2 c
    sour cream
  • 1 sm
    onion fine chopped
  • 1 stalk
    celery chopped
  • 2
    hard boiled eggs chopped
  • 2 Tbsp
    fresh lemon juice
  • 3-4 oz
    smoked salmon
  • 1/4 c
    fresh herbs like parsley, dill and scallion greens

How To Make smoked salmon potato salad

    Cut potatoes, and boil in salted water till fork tender. Drain and let cool to room temp. Chop and prepare veggies and herbs.

    In large bowl combine mayo, sour cream, chopped eggs, veggies and herbs combine. Taste for seasoning, add salt and pepper.

    Hand tear salmon and add to mayo mix along with fresh lemon juice. Next combine potatoes. Combine and refrigerate till serving. Add fresh herbs for garnish. Or can be served at room temp. Flavors get better each day. Can be refrigerated for up to 3 days.
