smoked salmon potato salad
I made this at the beginning of lent. The smokey Salmon added to the potato salad gives it a great smokey taste (almost like bacon) It was a big hit in my Family. The next day this made a great lunch.

Ingredients For smoked salmon potato salad

3 lbwaxy potatoes i used 1/2 red 1/2 yukon

1/2 cmayonnaise

1/2 csour cream
-
1 smonion fine chopped

1 stalkcelery chopped

2hard boiled eggs chopped
-
2 Tbspfresh lemon juice
-
3-4 ozsmoked salmon
-
1/4 cfresh herbs like parsley, dill and scallion greens
How To Make smoked salmon potato salad

1Cut potatoes, and boil in salted water till fork tender. Drain and let cool to room temp. Chop and prepare veggies and herbs.

2In large bowl combine mayo, sour cream, chopped eggs, veggies and herbs combine. Taste for seasoning, add salt and pepper.

3Hand tear salmon and add to mayo mix along with fresh lemon juice. Next combine potatoes. Combine and refrigerate till serving. Add fresh herbs for garnish. Or can be served at room temp. Flavors get better each day. Can be refrigerated for up to 3 days.
