Ingredients For roasted sweet potatoes with pineapple & pecans

2 Tbspvegetable oil

5 csweet potatoes, peeled and cut into chunks

1 cfresh pineapple, cut into chunks

salt

3/4 cpecans, coarsely chopped

2 Tbsppure maple syrup

1 Tbsporange marmalade
-
1 Tbspfresh lemon juice

1/2 tspdijon mustard
How To Make roasted sweet potatoes with pineapple & pecans

1Preheat oven to 425 degrees. Line a baking sheet with foil. Toss sweet potatoes and pineapple with oil and salt. Transfer to prepared baking sheet and roast 15 minutes.

2Add pecans and continue roasting 10 more minutes; then transfer to a large bowl.

3Whisk maple syrup, marmalade, lemon juice, mustard and salt to taste together in a small bowl. Pour over sweet potato mixture and gently toss to combine.
