Okay, my family loves Jalapeno Pierogies, yet they are so hard to find...so, I made a concoction of my own. It's fantastic might I add... Such yummy, cheesy, rich goodness. If dieting, this is not the meal for you...unless you're taking a day off Lol....my family just loved this casserole. I used lots of sweet onion, butter, cheeses, sour cream, jalapenos, half n half and last but not least BACON! You wouldn't have to add the Jalapeno...add whatever you like. It will be delicious! Ingredients For pierogi casserole - cassie style

8 ozlasagna noodles, cooked, rinsed and drained

5 lbpotatoes, peeled, chunked, cooked until tender

1/2 csour cream
-
1 1/2 stickbutter
-
1 lgsweet onion, chopped
-
1 lgjalapeno, minced ( optional )
-
4 - 5 clovegarlic, minced
-
1 1/2 tspsalt
-
1 1/2 tsppepper
-
1 - 8 oz( 2 cups ) shredded, sharp cheddar cheese - divided
-
6 ozvelveeta cheese, cubed
-
1/2 - 3/4 chalf n half
-
1 tspgarlic powder
-
1 Tbspdried parsley
-
3/4 lbbacon, cooked and crumbled
- PREP TIME DOES NOT INCLUDE TIME FOR COOKING POTATOES AND NOODLES
How To Make pierogi casserole - cassie style

1First - boil potatoes till fork tender.

2While potatoes are boiling, prepare noodles; rinse and drain.

3In a skillet or dutch oven saute onions, jalapeno and garlic until onions are translucent. Reserve 1/2 cup of onion/butter mixture.

4When potatoes are finished, drain and place in large bowl with the Velveeta, 1 cup cheddar, 1/2 cup sour cream, salt, pepper, parsley, all but 1/2 cup butter / onion mixture, 1/2 - 3/4 cup half n half. Mix potatoes with hand mixer until smooth.

5Preheat oven to 350 degree F. Spray a 9 x 13 casserole dish with nonstick cooking spray.

6Evenly spread half lasagna noodles on the bottom of casserole dish. Spread 1/2 potato mixture. Sprinkle evenly with a hand full of cheese.

7Evenly spread the remainder of noodles over potatoes.

8Spread remainder of potatoes over the noodles. Sprinkle the crumbled bacon evenly. Spread remaining onion/butter mixture over potatoes. Sprinkle with remaining cheese.

9Place casserole in oven for 30 - 35 minutes or until browning and bubbly. Let set for at least 5 minutes before cutting. Now, enjoy this delicious, satisfying pierogi casserole.
