Ingredients For my pork chop casserole- delish!

oilfor frying chops and vegetables - i used some bacon grease
-
61/2 - 3/4 inch thick - pork chops, center cut or could use boneless, the bone in have more flavor

1 clovegarlic minced
-
1/2each - red & green pepper, chopped
-
1med onion, chopped
-
1 - 10.5 ozeach - can cream of chicken and cream of celery soup
-
1 - 32 ozbag cubed hash browns - thawed
-
2/3 csour cream
-
1/2 ceach - milk & heavy cream
-
3/4 tspeach - salt & pepper
-
seasonsalt, garlic powder & pepper
-
1 1/2 cshredded, cheddar cheese - divided
-
1 cfrench fried onions
How To Make my pork chop casserole- delish!

1Preheat oven to350 degree F. Rinse pork chops and pat dry with paper towels. Sprinkle both sides with season salt, pepper and garlic powder.

2Brown chops on both sides in bacon grease if you have any on hand - if not use whatever oil is available. Set aside.

3In a skillet with about 1 1/2 tablespoons bacon fat, saute onion, peppers and garlic until tender. Set aside.

4In a large bowl, add potatoes, celery soup, chicken soup, 3/4 tsp salt, 3/4 tsp pepper, pepper mixture, 1/2 cup of the cheddar cheese, sour cream, milk and cream. Stir until well combined.

5Spray a 9 x 13 baking dish with nonstick cooking spray. Spread potato mixture, evenly into the prepared dish.

6Place browned chops atop the potatoes.

7Cover dish with foil and bake for 45 minutes or until chops are done.

8Remove foil and sprinkle the top of chops with french fried onions and remaining cheese. Place back into the oven for another 5 - 10 minutes or until cheese is melted and onions begin to brown. Season to taste and serve immediately.
