Ingredients For ~ mexican inspired hashbrown casserole ~

1 smonion, minced

1 - 23 ozsalsa con queso ( med heat )

1 - 30 ozshredded hash browns - or have used cubed style homefries

1 - 8 ozsour cream
-
1 stickbutter, melted
-
1 - 16 ozshredded, fiesta blend cheese
How To Make ~ mexican inspired hashbrown casserole ~

1Preheat oven to 350 degree F.
Mix all ingredients in a large bowl except for the Fiesta blend cheese. -
2Spray a 9 x 12 baking dish with non stick cooking spray.
Spread hash brown mixture evenly into prepared dish.
Bake for 50 minutes and remove from oven. -
3Sprinkle evenly with shredded cheese and bake another 10 - 15 minutes or until cheese is melted and bubbly.

4Remove from oven and leave set up about 5 minutes, before cutting.
