1/2 cbutter

8 ozcream cheese, low-fat

1/2 csour cream, lite

1 lgegg, beaten

salt and pepper to taste
How To Make make ahead mashed potatoes

1Boil potatoes with chopped onions until tender, about 10 minutes. Drain & mash while hot.

2Add butter, cream cheese, sour cream to potatoes and mix.

3Add a spoon of hot potato mixture to beaten egg, stir, and then add to entire potato mixture. (This tempers the egg.)

4Salt and pepper to taste. Eat, or save until later. Bake at 350 degrees for 30 - 35 minutes. Keeps up to 2 or 3 days.
