lizzy's homemade samosas
Another great vegetarian recipe from my friend Lizzy. She adapted the dough from a recipe in Michael Pandya's Indian Vegetarian Cooking.

Ingredients For lizzy's homemade samosas
- DOUGH INGREDIENTS

1 cwhole wheat flour
-
1 - 2 scoopwhey protein concentrate
-
1/8 tspbaking powder
-
1 dashsea salt
-
3 Tbspcoconut or olive oil
-
cold water
-
additional oil for frying
- FILLING INGREDIENTS

4potatoes, diced
-
1 or more cwater or broth
-
2 clovegarlic, minced
-
1/2 tspginger paste
-
1 tspcumin seeds
-
1/2 tspturmeric, ground
-
1 tspgaram masala
-
1green chili, minced
-
coconut or oilive oil for saute
-
1/2 cpeas, cooked
How To Make lizzy's homemade samosas

1DOUGH: Combine flour, whey protein concentrate, baking powder, sea salt.

2Mix in 3T coconut or olive oil with fingers until mixture is crumbly.

3Gradually add enough cold water to form a firm pliable while kneading for a few minutes.

4Divide dough into 4 balls. Flatten balls and roll into thin disks. Cut each disk into a half circle. Moisten straight edge with water, fold over to form cone, pinching edge to make seam.

5Fill samosa with cooked filling, moisten edges and pinch to seal.

6Pan fry in coconut or olive oil a few minutes on each side until golden and serve with tamarind sauce.

7FILLING: Place potatoes in a pot with a cup or so of water or broth.

8In a separate pan, heat oil and saute green chili for about a minute. Add garlic with ginger paste, cumin seeds, turmeric, garam masala, and saute for another minute.

9Add seasoning mixture to potatoes and cook until potatoes are tender.

10Mash potato mixture and add peas, combining well. Use about 2T to fill samosas (or good to just eat as is).
